A proper biryani is built in layers, not stirred together, and that is exactly how we make it. The chicken is marinated in yogurt with ginger, garlic, green chilli and a Pakistani-style biryani masala, then cooked down into a thick gravy. Long-grain basmati is boiled separately with bay leaf, cardamom, cloves and black cumin until it is only just tender, then spooned over the chicken with browned onions, chopped mint and coriander, and a little saffron-tinted milk.
Sealed and steamed on a low flame, the rice absorbs the masala from below while staying loose and fragrant on top. The heat sits comfortably in the medium range — warm and layered rather than punishing. Chicken biryani travels extremely well, which is why it is our most-ordered takeout item for family dinners, game nights and small gatherings across Hollick-Kenyon, McConachie and Clareview.
