Our take on an Indo-Chinese street-food staple: fries fried until genuinely crisp, then tossed in a hot wok with honey, chilli, garlic and soy until every piece is glazed. Sesame seeds and spring onion go on last. Sweet, sharp and salty in the same bite.
Timing is everything with this one. The fries are fried twice so the crust can hold up to the sauce, and the glaze is made separately in a screaming-hot wok — garlic, red chilli, honey, a little vinegar and soy reduced until it is thick enough to coat. The two only meet at the last second, which is why the fries reach the table crisp rather than soggy.
It is the snack that disappears first at the table, and the one most likely to get ordered again halfway through the meal. Vegetarian, shareable and a good bridge for anyone easing into spice.
