Shahi means royal, and this is the Mughlai side of our menu: paneer in a pale, silky gravy of cashews, tomato, cream and warm whole spices. It is the mildest curry we make and the one children and first-time guests almost always finish.
The gravy is the whole point. Cashews are soaked and ground to a smooth paste, then cooked with onion, tomato and a little cream until the sauce turns glossy and pale gold. The spicing is deliberately gentle — green cardamom, a small amount of garam masala, no chilli heat to speak of — so the sweetness of the nuts and dairy stays forward. Fresh paneer is added late and left just long enough to soften.
It pairs naturally with our spicier dishes: order shahi paneer alongside chicken karahi or lamb curry and the table gets both ends of the spectrum. It also reheats better than most creamy curries, making it a practical choice for family takeout across McConachie, Matt Berry and Miller. Please note this dish contains cashew nuts and dairy.
