Gulab jamun is how a South Asian meal is supposed to end. Soft milk-solid dumplings are fried to a deep amber, then rested in a warm sugar syrup scented with cardamom and rose until they are heavy with it all the way through.
The dough is made from khoya (reduced milk solids) with just enough flour to hold it together, rolled smooth so the surface does not crack, and fried slowly at a low temperature so the centre cooks through before the outside darkens. Straight from the oil they go into syrup that has been infused with green cardamom and a touch of rose water, where they sit and swell.
Served warm, two to a portion, they are the natural finish after butter chicken or biryani — sweet enough to close out a spiced meal and light enough to share. They are also the easiest thing to add to a family takeout order, and a regular request for celebrations and small gatherings around northeast Edmonton. Contains dairy and gluten.
