Chicken karahi is Pakistani cooking at its most direct: chicken on the bone, tomatoes, ginger, garlic and green chilli cooked hard and fast in a wok-shaped karahi until the gravy tightens and clings. No cream, no shortcuts — just the ingredients concentrating into each other.
What separates a real karahi from an everyday curry is technique. We cook on high heat so the tomatoes break down and the oil separates, then keep working the pan so the masala coats the chicken rather than pooling around it. Freshly pounded coriander seed and black pepper go in near the end, followed by julienned ginger and slit green chillies that stay bright and sharp.
The finish is deliberately rustic — a thick, glossy, tomato-forward gravy with real heat behind it.
