Our lamb curry is the dish that rewards patience. Bone-in halal lamb — or goat, when you prefer it — is browned and then simmered for hours in a dark onion and tomato masala until the meat gives way and the marrow enriches the gravy.
There is no fast version of this. Onions are cooked down until genuinely brown, not merely soft, which is where the depth of colour and sweetness comes from. Ginger, garlic, tomato, coriander, cumin, turmeric and chilli follow, and the meat goes in on the bone so the connective tissue can break down and thicken the sauce naturally. Whole garam masala and a scatter of fresh coriander finish it just before serving.
Goat curry is prepared the same way and carries a stronger, slightly gamier flavour that many of our Pakistani and South Asian guests specifically ask for. Both are halal, both are generous with the meat, and both are best eaten with naan and rice on a cold Edmonton evening. It is a regular weekend order for families around Clareview, Brintnell and Fraser.
